Javier Feixas, chef del Restaurante La Borraja &#8211; San Nicol\u00e1s"},"content":{"rendered":"<p>Desde&nbsp; <a href=\"http:\/\/www.ajegranada.org\/asociados\/grupo-la-borraja\/\"><strong>Grupo La Borraja<\/strong><\/a>, nos complace remitirles Nota de Prensa acerca de la participaci\u00f3n de nuestro <strong>chef Javier Feixas<\/strong> en la <strong>Semifinal del Concurso Cocinero del A\u00f1o 2018<\/strong>, en la que ha conseguido el <strong>primer puesto y pase a la final<\/strong> que se celebrar\u00e1 el pr\u00f3ximo 19 de Abril en la Feria Alimentaria de Barcelona.<br \/>\nNo&nbsp;podemos estar m\u00e1s satisfechos por este reconocimiento y gran paso no solo para nuestra empresa si no tambi\u00e9n para nuestra provincia.<br \/>\n<strong>\u00a1A la final!<\/strong><br \/>\n<strong> Javier Feixas, chef del Restaurante La Borraja &#8211; San Nicol\u00e1s, ganador de la 4\u00aa Semifinal de la VII edici\u00f3n del Concurso Cocinero del A\u00f1o<\/strong><\/p>\n<p>Una emocionante jornada que arrancaba a las 8 de la ma\u00f1ana y en la que los cocineros participantes dispon\u00edan de 5 horas para la elaboraci\u00f3n de sus men\u00fas. El lugar escogido por la organizaci\u00f3n del evento, el Pabell\u00f3n de la Navegaci\u00f3n de la Isla de la Cartuja de Sevilla y la Escuela de Hosteler\u00eda de Sevilla.<\/p>\n<p>El cocinero granadino, Javier Feixas, perteneciente al Grupo La Borraja y que desarrolla su actividad como jefe de cocina en el Restaurante San Nicol\u00e1s, ha propuesto un men\u00fa de tres platos consistente en un entrante, un plato principal y un postre:<br \/>\n&#8211; Vieira grillada, gyoza de guisante y manzana granny smith, caldo de jam\u00f3n y aire de mantequilla tostada.<br \/>\n&#8211; Solomillo de ciervo, infusi\u00f3n de granada y pino, parfait de coraz\u00f3n de ciervo y crema de apionabo<br \/>\n&#8211; Tarte Tatin de manzana Granny Smith con helado y crumble de Sabl\u00e9 Bret\u00f3n.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-24798\" src=\"http:\/\/www.ajegranada.org\/wp-content\/uploads\/2018\/02\/La-borraja.jpg\" alt=\"\" width=\"3264\" height=\"2448\"><\/p>\n<p>Tras la presentaci\u00f3n de los platos de los candidatos y las diferentes actividades propuestas por la organizaci\u00f3n, el jurado del Concurso Cocinero del A\u00f1o fall\u00f3 a favor de Javier Feixas, destacando sus platos por su sabor, presentaci\u00f3n y uso del producto. El segundo finalista, Antonio Bort, del restaurante Ispal (Sevilla) acudir\u00e1 junto al cocinero de La Borraja a la final del Concurso que se celebrar\u00e1 el pr\u00f3ximo 19 de Abril durante la feria Alimentaria de Barcelona.<\/p>\n<p>Seg\u00fan declaraciones del propio Feixas tras conseguir el pase directo a la final \u201cEsta participaci\u00f3n supone un paso importante, no solo a nivel personal si no que tambi\u00e9n sirve para poner a Granada un poco m\u00e1s cerca del panorama gastron\u00f3mico nacional. Me siento muy feliz por poder representar a mi ciudad y a por supuesto al Grupo La Borraja que me da soporte para todo este arduo camino.<\/p>\n<p>Concurso Cocinero del A\u00f1o es un prestigioso certamen gastron\u00f3mico a nivel nacional, presidido por Mart\u00edn Berasategui (3* Michelin) y Vicepresidido por Jordi Cruz (3* Michelin), ganador de la primera edici\u00f3n en 2006.<\/p>\n<p>Est\u00e1 dirigido a cocineros profesionales de toda la geograf\u00eda espa\u00f1ola, mayores de 23 a\u00f1os. Esta s\u00e9ptima edici\u00f3n se ha dividido en cuatro grandes semifinales, repartidas en dos a\u00f1os y celebradas en cuatro \u00e1reas geogr\u00e1ficas. En ellas toman parte 32 cocineros de los que s\u00f3lo los 8 mejores (dos en cada semifinal) alcanzar\u00e1n la final.<\/p>\n<p>Los miembros del jurando han sido: Xanty El\u00edas, Restaurante Ac\u00e1nthum (1*), Huelva; Juan Carlos Padr\u00f3n, Restaurante el Rinc\u00f3n de Juan Carlos (1*) de Santiago del Teide (Tenerife), Prix au Chef de l\u00b4Avenir 2017 y segundo clasificado en la Gran Final del Concurso Cocinero del A\u00f1o 2012; Ra\u00fal Resino, Restaurante Ra\u00fal Resino (1*) de Benicarl\u00f3 (Castell\u00f3n) y ganador de la \u00faltima edici\u00f3n del certamen; Joaqu\u00edn Baeza, Restaurante Baeza &amp; Rufete, Playa San Juan (Alicante) y<br \/>\nganador de la edici\u00f3n de 2014; Benito G\u00f3mez, Restaurante Bardal (1*) de Ronda (M\u00e1laga); y Julia P\u00e9rez, periodista gastron\u00f3mica.<\/p>\n<p>La primera semifinal tuvo lugar el 30 de noviembre de 2016 en Barcelona y los ganadores fueron los chefs \u00c1lvaro Salazar del Restaurante Argos (1*) (Port de Pollen\u00e7a, Palma de Mallorca) y Pedro Montolio del Hotel Barcelona Princess (Barcelona). La segunda semifinal tuvo lugar en Madrid el pasado mes de mayo de 2017, siendo Rub\u00e9n Osorio Casta\u00f1\u00f3n, chef del restaurante Ergo de Miranda de Ebro, (Burgos) y Jos\u00e9 David Fern\u00e1ndez Portales, jefe de cocina del restaurante<br \/>\nPabell\u00f3n, en el complejo Florida Retiro (Madrid), los finalistas. La tercera semifinal se celebr\u00f3 en Bilbao el pasado 13 de diciembre, con la victoria de Asier Alcalde (tercer clasificado en el Premio al Cocinero Revelaci\u00f3n en la reciente edici\u00f3n de Madrid Fusi\u00f3n 2018), del restaurante Laia de Hondarribia (Guip\u00fazcoa) y Daniel Garc\u00eda, del restaurante Aboiz de Garai (Vizcaya).<\/p>\n<p><strong>Restaurante La Borraja &#8211; San Nicol\u00e1s<\/strong><br \/>\nEl antiguo Carmen de Lindaraja acoge el nuevo proyecto gastron\u00f3mico del Grupo La Borraja, del chef Miguel Dorado que cuenta para dirigir la cocina con Javier Feixas. Inaugurado en Mayo de 2017 en uno de los barrios m\u00e1s bonitos de toda Espa\u00f1a, el Albaic\u00edn y con unas vistas incre\u00edbles a la Alhambra granadina.<\/p>\n<p>La pasi\u00f3n por la gastronom\u00eda del equipo culinario se muestra y se degusta en cada uno de sus platos que beben de la tierra, del aire y del mar de Andaluc\u00eda.
